Cauliflower Cheese

Cauliflower Cheese 1tick-150x150[1]    Serves 4

  • 1 cauliflower, stripped
  • 50g butter,
  • ¼ cup plain flour
  • ½ – 1 pint milk
  • 200g mature cheddar cheese, grated
  • Black pepper
  1. Cut cauliflower into florets and place in a pan of water. Bring to the boil, lower the heat, cover and simmer for 15 minutes until tender. Drain and place in an ovenproof Cauliflower Cheese 2dish.
  2. Heat the oven to 200C.
  3. In a saucepan, melt the butter over a medium heat. Add the flour and stir and cook for 30 seconds.
  4. Gradually add the milk a little at a time and stir each time, until the sauce is thick and smooth.
  5. Turn off the heat, add ¾ of the cheese and stir until melted and sauce is smooth again.Cauliflower Cheese 3
  6. Pour over the cauliflower, sprinkle with the remaining cheese and season with black pepper.
  7. Bake in the oven for 20 minutes until the top is golden.

This can be made with broccoli if you prefer, or a mixture of both.
