- 1 cauliflower, stripped
- 50g butter,
- ¼ cup plain flour
- ½ – 1 pint milk
- 200g mature cheddar cheese, grated
- Black pepper
- Cut cauliflower into florets and place in a pan of water. Bring to the boil, lower the heat, cover and simmer for 15 minutes until tender. Drain and place in an ovenproof dish.
- Heat the oven to 200C.
- In a saucepan, melt the butter over a medium heat. Add the flour and stir and cook for 30 seconds.
- Gradually add the milk a little at a time and stir each time, until the sauce is thick and smooth.
- Turn off the heat, add ¾ of the cheese and stir until melted and sauce is smooth again.
- Pour over the cauliflower, sprinkle with the remaining cheese and season with black pepper.
- Bake in the oven for 20 minutes until the top is golden.
This can be made with broccoli if you prefer, or a mixture of both.
