- 1 tbsp oil
- 1 leek, finely chopped
- 280g plain flour
- 2 tsp baking powder
- ½ tsp Bicarbonate of soda
- 1 egg, beaten
- 300 ml plain yoghurt
- 4 tbsp butter, melted
- 25g cheddar cheese, grated
- Handful fresh chives or parsley, chopped
- 150g cooked ham, chopped
- Line a muffin tin with cases. Heat the oil in a saucepan, add the chopped leek and cook for 2-3 minutes, until softened.
- Heat Oven to 200C.
- Sift the flour, baking powder and bicarb into a large bowl and mix together.
- In a separate bowl or large jug, Mix together the egg, melted butter and yoghurt. Add the cheese, herbs and cooked leek and half of the ham and mix well.
- Add the egg mixture to the flour. Gently stir together until just combined. It is fine if it is a little lumpy.
- Divide the mixture between the 12 muffin liners, so they are about two thirds full.
- Sprinkle over the remaining chopped ham and bake for 25-30 minutes when they should be golden.
- Either serve warm, or cool on a wire rack.
These are great, either for snacks and packed lunches, or parties and buffets.
