- 500g strong white bread flour
- 1 sachet dried yeast
- 1 tsp salt
- 3oo ml warm water
- 1 tbsp olive oil
- 4 tbsp peanut butter
- 3 spring onions, finely chopped
- 1 tbsp dried herbs
- Put the flour in a large mixing bowl, stir in the salt and yeast and make a well in the centre.
- Pour in the water, spring onions, herbs and peanut butter and combine to a dough.
- Either on a floured surface, or in an electric mixer with the dough hook, knead for 10 minutes, then leave to rest for 5 minutes covered with a tea towel.
- Tip onto an oiled baking tray and shape into a flattish round and slash the top with a sharp knife.
- Cover with a tea towel and put in a warm place for an hour to double in size.
- Heat the oven to 200C and bake for 30 minutes until firm and golden brown.
You can use any herbs, but I find that either sage or thyme is most aromatic.
