Fruit Scones

Fruit Sconestick-150x150[1]        Makes 12-14

  • 500g self-raising flour
  • 12g baking powder
  • 1 tsp cinnamon
  • Pinch of salt
  • 125g butter, chilled
  • 125g caster sugar
  • 250 ml milk plus extra for glazing
  • 75g sultanas
  • 75g raisins
  1. Preheat the oven to 200C.
  2. In a bowl, sieve the flour, baking powder, salt and cinnamon and mix.
  3. Rub in butter until it resembles fine breadcrumbs. Make a well in the centre.
  4. Dissolve the sugar in the milk and pour into the well.
  5. Gradually mix, then, add the fruit until it forms soft dough.
  6. Lightly flour a surface and roll the dough until about 2cm thick. Use a cutter to cut out rounds and place them on a baking tray.
  7. Brush with milk and bake for 15 – 20 minutes until golden and cooked through.

You could substitute 150g cherries, quartered for the fruit, if you want cherry scones, or substitute 75g cherries for just one of the fruits for a variety.
