Caramel Chicken

  • 2 tsp peanut oil
  • 500g chicken breasts or thighs
  • 1 large onion, thinly sliced
  • 2 garlic cloves, thinly sliced
  • 1 tbsp soy sauce
  • ¼ cup caster sugar
  • 2 tbsp fish sauce
  • 1 tbsp limejuice
  1. Heat the oil in a frying pan over a medium to high heat. Cook the chicken strips until browned. Set aside.
  2.  Cook onion for 5 mins until golden and soft and then add the garlic and cook for 1 minute until fragrant.
  3. Return the chicken to the pan, add the soy sauce and heat until chicken is cooked through.
  4. Add the sugar and cook, stirring, until the mixture is bubbling.
  5. Add the fish sauce and limejuice and cook until the sauce thickens.
  6. Serve with rice or noodles.

 You can use pork for this recipe if you fancy a change.
