- 2 tsp peanut oil
- 500g chicken breasts or thighs
- 1 large onion, thinly sliced
- 2 garlic cloves, thinly sliced
- 1 tbsp soy sauce
- ¼ cup caster sugar
- 2 tbsp fish sauce
- 1 tbsp limejuice
- Heat the oil in a frying pan over a medium to high heat. Cook the chicken strips until browned. Set aside.
- Cook onion for 5 mins until golden and soft and then add the garlic and cook for 1 minute until fragrant.
- Return the chicken to the pan, add the soy sauce and heat until chicken is cooked through.
- Add the sugar and cook, stirring, until the mixture is bubbling.
- Add the fish sauce and limejuice and cook until the sauce thickens.
- Serve with rice or noodles.
You can use pork for this recipe if you fancy a change.
