Banana and Maple Tea Bread

Banana Maple Tea Breadtick-150x150[1]   Makes 1 large loaf

  • 125g butter, softened
  • 120g caster sugar
  • 2 tbsp maple syrup
  • 2 eggs
  • 3 large bananas, mashed
  • 125g plain flour
  • 125g self-raising flour
  • ½ tsp bicarbonate of soda
  1. Preheat the oven to 160C. Grease a large loaf tin.
  2. In a large bowl, beat the butter and sugar together until pale and fluffy.
  3. Add the eggs one at a time, beating well.
  4. Sift in the flours and bicarbonate of soda and fold in with a wooden spoon until just combined.
  5. Pour the mixture into the lined tin, smooth the top and bake for 45 minutes or until a skewer come out clean.
  6. Cool in the tin for 10 minutes then transfer to a wire rack to cool completely.

This is a great quick and easy recipe for using up those ripe bananas.
