- 125g butter, softened
- 120g caster sugar
- 2 tbsp maple syrup
- 2 eggs
- 3 large bananas, mashed
- 125g plain flour
- 125g self-raising flour
- ½ tsp bicarbonate of soda
- Preheat the oven to 160C. Grease a large loaf tin.
- In a large bowl, beat the butter and sugar together until pale and fluffy.
- Add the eggs one at a time, beating well.
- Sift in the flours and bicarbonate of soda and fold in with a wooden spoon until just combined.
- Pour the mixture into the lined tin, smooth the top and bake for 45 minutes or until a skewer come out clean.
- Cool in the tin for 10 minutes then transfer to a wire rack to cool completely.
This is a great quick and easy recipe for using up those ripe bananas.
