- 2 medium potatoes, diced
- 2 large sweet potatoes, diced
- Handful coriander, chopped
- 1 tsp cumin seeds
- 75g soft cheese
- 50g plain flour
- 1 egg, beaten
- 1 tbsp olive oil

Boil and simmer potatoes and sweet potatoes until tender. Drain and leave in the pan without the lid to dry out a little.

Mash the potatoes with the egg, coriander, cumin seeds, soft cheese and flour.
- Season with salt and black pepper and shape into several cakes on a floured board.
- Heat the oil in a frying pan and fry for 2-3 minutes each side.
These are great as a side or a starter as they are nice and light.
You could also serve as a light supper with mango chutney.
