Marinade for white fish –Lemon and Garlic Butter with herbs
- 30g butter, melted
- 3 cloves garlic, crushed
- Juice of ½ lemon
- 2 tbsp fresh thyme, chopped
- 2 tbsp flat leaf parsley, chopped
- Put the butter, garlic and lemon in a bowl or dish and mix well.
- Place the fish in the bowl and coat well. Cover with cling film and chill in the fridge until ready to use.
- When ready to BBQ, place the fish in foil and sprinkle with herbs. Close the foil.
- Cook on the BBQ and open the foil half way through cooking.
Marinade for Salmon- Brown Sugar, Soy and Lemon
- 3 tbsp dark soy sauce
- Zest of a lemon
- 1 tsp ground black pepper
- 3 tbsp dark brown sugar
- 2 tbsp vegetable oil
- 2 garlic cloves, crushed
- Place all the ingredients in a bowl. Put in the salmon and coat well.
- Cover with cling film and chill until ready to cook.
- BBQ on low, basting with the rest of the marinade several times.
Marinade for Salmon or Trout – Soy, Sherry and Honey
- 3 tbsp sherry
- 3 tbsp light soy sauce
- 1 garlic clove, crushed
- 1 tbsp olive oil
- 2 tbsp honey
- Juice of half a lime
- Follow instructions as for Salmon recipe.
