- 1 pack baby new potatoes
- 2 tbsp light salad cream
- Handful of fresh mint, chopped
- 1 tbsp lemon juice
- Wash the potatoes and place in a pan of water. Put on the lid.
- Bring to the boil and simmer for 20 minutes until tender.
- Drain and remove lid.
- Add the salad cream, mint and lemon juice, replace lid and shake vigorously to combine.
Lovely either warm or cold.
