- 200g butter, softened
- 155g caster sugar
- 2 tsp vanilla extract
- 2 eggs
- 300g self-raising flour
- 185 ml milk
- 1 large eating apple, peeled and cored
- 200g strawberries, hulled and halved

- 75g plain flour
- 50g butter, chilled and chopped
- 55g dark brown sugar
- Preheat the oven to 180C. Line a round cake tin with a greaseproof cake liner.
- In a large bowl, beat together the butter, sugar and vanilla extract until pale and fluffy.
- Add the eggs one at a time and beat until fully combined.
- Sift in the flour, add the milk and mix until well combined
- Spoon the mixture into the tin. Cut the apple into slices and lay on top with the strawberries.
- To make the crumble topping, rub together the flour, butter and brown sugar until thick breadcrumbs form. Sprinkle over the top of the fruit.
- Bake in the oven for 1 hour and 10 mins or until a skewer comes out clean, then remove from oven and cool for 10 mins in the tin before turning onto a wire rack to cool completely.
This is one of the nicest cakes I have tried, as I love fruit in cakes and this is a really moist one with a crumble top that gives a crunchy finish.
A friend suggested it would be nice with rhubarb instead of apple. Thank you Sue x
