- 1 tbsp olive oil
- 500g Italian sausage (or similar)
- 1 onion, chopped
- Large handful fresh spinach, chopped
- 3 garlic cloves, crushed
- 200 g dried pasta of choice
- 400 ml chicken stock
- 150 ml double cream
- Can of chopped tomatoes
- 1 red chilli, deseeded and chopped
- 250g cheddar, grated
- 4 spring onions, sliced
- Heat the oil over a medium heat in a large pan or skillet. Fry the onions and sausage for about 5 minutes, until onions are softened.
- Add the garlic and cook for another minute.
- Add the spinach, stock, cream, tinned tomatoes, chilli and pasta and season with salt and pepper.
- Bring to a boil, then reduce heat, cover with lid and simmer for about 20 minutes, stirring occasionally.
- When the pasta is tender, mix in half the cheese and sprinkle the rest on top with the spring onions.
This is also great cold, which is useful for summer parties or BBQs x
