- 1 cup oats
- ½ cup butter
- ½ cup brown sugar
- ½ cup sugar
- 1 egg
- ½ tsp vanilla extract
- 1 cup plain flour
- ¼ tsp salt
- ½ tsp baking powder
- ½ tsp bicarbonate of soda
- 200g milk chocolate chips
- 200g white chocolate, roughly chopped
- Preheat the oven to 180C.
- Blend the oats to a fine powder.
- Cream the butter and both sugars until light and fluffy.
- Add the eggs and vanilla extract, then mix in flour, oats, salt, baking powder and bicarb.
- Stir in the chopped white chocolate and milk chocolate chips.
- Now for the sticky bit. Roll into little balls in your hands (1 inch round) and place about 3 cm apart on a greased baking sheet. (No need to grease if using stoneware)
- Bake for about 13 – 15 mins until starting to brown.
- Let cool in the tin and transfer to a wire tray.
If you want the cookies to look brown, add 2 tbsp of cocoa powder at step 4.
