- 2 skinless chicken breasts, cut in to 2cm cubes
- Marinade
- Juice of a lime
- 1 tsp ground cumin
- 1 tsp ground coriander
- 2 garlic cloves, crushed
- 2 tsp finely grated ginger
- 2 tbsp natural yoghurt
- Salad
- 2 large carrots
- 2 eating apples, unpeeled and grated
- 4 tbsp clear honey
- Juice of ½ lemon
- 2 tbsp chopped fresh mint
- In a bowl, mix together the marinade ingredients, add the chicken cubes and season with salt and pepper.
- Cover chicken in the marinade, cover bowl with cling film and chill in fridge for 30 mins.
- Mix salad ingredients in another bowl, season to taste and place in fridge to chill.
- Heat oven to 200C.
- Take chicken pieces and thread them onto skewers.
- Place on an oven dish/baking tray and cook for 20 mins until meat is cooked through.
- Place on plates on top of salad and serve.
You can BBQ the skewers rather than cooking them in the oven if you prefer.
