Cheesy Bean Burgers

       Makes 4

  • 400g can butter beans, drained and rinsed
  • 3 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 garlic cloves, crushed
  • 75g Wensleydale cheese, crumbled
  • 3 tbsp plain flour
  • 1 egg, beaten
  • 50g fresh white breadcrumbs
  1. Tip the beans into a bowl and mash with a fork to form a rough puree. Set aside.
  2. Heat 1 tbsp oil in a small frying pan and cook onion and garlic over a gentle heat for 5 mins until golden and soft.
  3. Stir onion mixture into the butter beans, mix in cheese and season.
  4. Shape into 4 burgers, cover and chill in fridge for 10 mins.
  5. Tip flour, egg and breadcrumbs onto three separate plates. Roll each burger in the flour, then egg and then breadcrumbs.
  6. Heat remaining oil into a non stick frying pan and cook burgers for 8-10 mins, turning every so often, until golden.

I did these on the BBQ and they stayed formed nicely. They can be served with veg or salad, or as I have done, with new potatoes in bread rolls.
