- 125g butter
- 150g dark chocolate
- 225g granulated sugar
- 3 eggs
- 1 tsp vanilla extract
- 250g plain flour
- 30g cocoa powder
- ½ tsp baking powder
- Filling
- 50g butter
- 75g icing sugar
- 50g plain choc
- Preheat the oven to 180C. Line a baking tray with greaseproof paper, or if you have a whoopie pie tin, grease with melted butter.
- Melt butter and chocolate together in a bowl (microwave for 1 min 30 secs)
- In a mixing bowl, whisk together vanilla extract, eggs and sugar, then fold in the chocolate mixture.
- Stir in the flour, cocoa powder and baking powder until you have a smooth thick paste.
- Place tablespoonfuls of the mixture onto the baking sheet/tin.
- Melt the reserved 50g peanut butter until runny and drizzle all over the top.
- Bake for 8 mins, then remove from oven and after a few mins to cool, remove onto a wire tray to cool. Repeat with the next batch.
- For filling, beat together the filling ingredients and spread on half the cakes, sandwiching another on top.
Some recipes suggest a marshmallow filling which you may prefer. Simply place a marshmallow on each biscuit and return to oven for a couple of minutes or until they are soft, then sandwich together.
