- 125g butter, softened
- 160g caster sugar
- 3 tsp finely grated orange peel
- 2 eggs
- 340g plain flour
- 1 tsp bicarbonate of soda
- ½ tsp baking powder
- 125 ml buttermilk
- 50g soft cheese
- 100g icing sugar
- 100g plain choc orange
- Preheat the oven to 180C. Line a baking tray with greaseproof paper, or if you have a whoopie pie tin, grease with melted butter.
- In a mixing bowl, beat together butter, sugar and orange rind until light and fluffy.
- Add eggs and beat well.
- In a separate bowl, sift together flour, bicarb and baking powder. Add half of it to the butter mixture.
- Stir in the buttermilk and then add the rest of the flour, stirring until just combined.
- Put tablespoons full of mixture on the baking trays/tin and bake for 10 mins until puffed up and golden.
- For filling, mix together the filling ingredients and spread on half the cakes, sandwiching another on top.
Sprinkle a little icing sugar over if you like a nice presentation, or for friends coming round.
