- 50g pecans
- 50g plain flour
- 25g soft brown sugar
- 25g butter

- 140g butter, softened
- 140g brown sugar
- 2 large eggs
- 225g self-raising flour
- 1 tsp baking powder
- 1 tsp mixed spice
- 3 tbsp milk
- 500g eating apples, peeled, cored and diced
- Preheat the oven to 160C. Line the base of a round cake tin.
- Put the top 4 ingredients into a food processor and blitz to a crumbly texture. Transfer to a bowl and set aside for the topping.
- Beat the butter and sugar until light and fluffy. Add the eggs one at a time and beat until fully combined.
- Sift in the flour, baking powder and spice, followed by the milk and apples and mix thoroughly.
- Spoon the mixture into the tin and sprinkle over the topping.
- Bake in the oven for 1 hour and 10 mins, then remove from oven and cool for 10 mins in the tin before turning onto a wire rack to cool completely.
This is one of the nicest cakes I have tried, as I love fruit in cakes and this is a really moist one.
